Directions
In a bowl, combine the stock, salt, pepper and P.A.N. Pre-cooked White Cornmeal. Mix until a smooth dough is formed.
In a separate bowl, combine the shallots, dill and fish. Add to the dough and stir until thoroughly combined.
Divide the dough into 12-15 equal-sized portions and shape into croquettes. Dip the croquettes in the egg and then in the flour and fry immediately in plenty of hot oil. Remove and transfer to paper towels to drain.
Serve the croquettes with French fries.
