Ingredients for 8 muffins
1/3 cup sugar
½ cup mayonnaise
¾ cup milk
1 cup all-purpose flour
1 cup blueberries
1 teaspoon vanilla extract
1 ½ teaspoons baking powder
2 eggs
Directions
Preheat oven to 350°. Line 8 muffin cups with paper cupcake liners; set aside.
Combine milk, mayonnaise, eggs and vanilla; set aside.
Mix flour, sugar and baking powder. Stir into mayonnaise mixture just until combined. Gently fold in blueberries. Evenly spoon batter into prepared cups. For even baking, fill any unused muffin cups halfway with water.
Bake 20 minutes or until toothpick inserted in centers comes out clean. Cool on wire racks 10 minutes. Remove muffins from cups and cool completely.
