1 container (16 oz.) 2 % cottage cheese
1 small chipotle pepper in adobo sauce (plus 1 Tbsp. sauce)
1 small red bell pepper, chopped
2 green onions, finely chopped
2 Tbsp. lemon juice
3 Tbsp. finely chopped fresh cilantro
Chicharrones

Chicharrones
Directions
In food processor or blender, process cottage cheese until smooth. Add mayonnaise, peppers and garlic; process until smooth. Stir in remaining ingredients except chicharrones. Chill, if desired. Serve with chicharrones or your favorite dippers.
