Shuku - Shuku

Ingredients for 12 servings

¼  cup P.A.N Pre-cooked White Corn Meal
½ cup warm milk
¾ cup sugar
1 cup grated coconut , plus an extra portion for sprinkling
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
2 egg yolks

Directions

Pre-heat oven to 375° F. Grease a 12x8 inch rectangular tray with butter.

Mix P.A.N Pre-cooked White Corn Meal, milk, coconut, sugar, egg yolk, nutmeg and vanilla in a bowl. If the mixture looks too dry, add more water or milk.

Divide dough into 12 equal portions and form small balls the size of a nut. Place on the tray and bake for 15 minutes or until golden brown. 

Remove from the oven and sprinkle coconut on top.
