Beef Empanadas

Ingredients for 6-8 servings

¼ cup tomato paste
½ green pepper, diced
½ pound ground beef
1 onion, diced
1 tablespoon olive oil
1 tablespoon soy sauce
1 teaspoon salt
1 ¼ cups water
2 cups P.A.N. Pre-cooked White Cornmeal
2 tablespoons olive oil
Salt, pepper and Madame Jeanette chili pepper to taste

Directions

Combine the P.A.N. Pre-cooked White Cornmeal, salt, olive oil and water until a firm dough is formed. If the dough is very dry, gradually add more water.

Shape into ping pong sized balls.

In a pan, heat 2 tablespoons of olive oil. Sauté the onions and add the pepper.

Add the ground beef and soy sauce.

Add the tomato paste, pepper and Madame Jeanette chili pepper, and salt if necessary.

Place the balls between two sheets of wax paper and roll out into disks.

Using a spoon, place a small amount of filling in the center of the disk. Fold in half and press the edges of the empanada so it closes properly.

Heat the oil to 350ºF. Fry the empanadas for approximately 5 minutes, or until golden.
