Spinach Pudding

Ingredients for 6-8 servings

¾ cup parmesan cheese, grated
1 cup P.A.N. Pre-cooked Yellow Maize Meal
1 cup spinach, cooked
2 eggs
3 cups milk
3 tablespoons melted butter
Salt and pepper to taste

Directions

Preheat the oven to 350 °F and grease with butter a mold.

Cook the spinach in boiling water. Drain the water and finely chop. Set aside.

Beat the eggs, butter, spinach, salt, pepper and cheese in a bowl. Slowly add P.A.N. Pre-cooked Yellow Maize Meal and mix until everything has integrated.

Pour the batter in the mold and bake for 1 hour, or until you insert a knife and it comes out clean.

Remove from the oven and let it rest for 5 minutes. Serve in the mold or unmold in a tray to decorate.
