Fried Plantains With Garlic Dipping Sauce

Ingredients for 6 servings

1 cup Mayonnaise
1 tsp. Chicken flavor Bouillon
2 Tbsp. fresh cilantro leaves
3 green plantains, sliced 1-in. thick
4 cloves garlic
Juice of 1 lime
Vegetable oil for frying

Directions

To make sauce, process Mayonnaise, lime juice, garlic, cilantro and Chicken flavor Bouillon in food processor; transfer to small bowl and set aside.

Heat about 1 cup oil in large deep skillet and fry plantains, turning occasionally, until light golden, about 2 minutes. Drain on paper towels. Flatten plantains to 1/3-inch thick using plate or tostonera.

Heat oil and fry plantains again until crisp, about 3 minutes. Drain on paper towels. Serve with sauce.
