Ingredients for 12 servings
10ml/ 2 teaspoons of baking powder
50g/ 2oz/ ⅓ cup chopped mixed (candied) peel
50g/ 2oz/ ½ cup chopped ready-to-eat dried prunes
60ml/ 4 tablespoons of sunflower oil
75g/ 3oz/ ⅔ cup brown (raw) sugar
75ml/ 5 tablespoons of milk
225g/ 8oz/ 2 cups plain (all-purpose) flour
Finely grated rind of 1 lemon
Directions
Preheat the oven to 200°C/ 400°F/ Gas 6. Lightly grease a large baking sheet.
Sift the flour and baking powder, then stir in the sugar, prunes, peel and lemon rind.
Mix the oil and milk, then stir into the mixture, to make a dough which just binds together.
Spoon into rocky heaps on the baking sheet and bake for about 20 minutes until golden. Transfer to a wire rack and leave to cool completely.
