Date and Orange Oat Cookies


Ingredients for 25 servings

5ml/ 1 teaspoon baking powder 
75g/ 3oz/ ½ cup dried dates, roughly chopped 
75g/ 3oz/ ⅔ cup medium oatmeal 
150g/ 5oz/ 1 ¼ cups self-raising (self-rising) wholemeal (whole-wheat) flour 
150g/ 5oz/ ¼ cup soft dark brown sugar 
150g/ 5oz/ 10 tablespoons of butter 
Finely grated rind of 1 unwaxed orange 

Directions

Preheat the oven to 180°C/ 350°F/ Gas 4. Lightly grease two baking sheets. 

Put the sugar and the butter in a large bowl and beat together until light and fluffy. 

In a separate bowl, sift the flour with the baking powder. Fold the flour mixture and then the oatmeal in to the butter and sugar mixture until well combined. Add the dates and mix well. 

Place heaped tablespoonfuls of the mixture on to the prepared baking sheets, spacing them well apart to allow the mixture room for spreading. Bake in the oven for 15-20 minutes, until golden. 

Leave the cookies to firm up slightly on the baking sheet for 1-2 minutes- Use a metal spatula to carefully transfer the cookies to wire racks and leave to cool completely. Store in an airtight container for 3-4 days. 

Variation. Replace the dates with dried chopped apricots, raisins, sultanas (golden raisins) or figs.
