Coconut-Curry Carrot Salad

Ingredients for 4 servings

1/8 tsp. ground cayenne pepper
¼ tsp. salt
1/3 cup golden raisins
1/3 cup Hellmann’s® or Best Foods® Vegan Carefully Crafted Dressing and Sandwich Spread
1/3 cup lite coconut milk
1/3 cup sliced almonds, toasted
½ tsp. curry powder
1 lb. carrots, shredded
2 Tbsp. sweetened flaked coconut, toasted


Combine Hellmann’s® or Best Foods® Carefully Crafted Dressing and Sandwich Spread, coconut milk, curry powder, salt and pepper in large bowl.

Add remaining ingredients and toss to coat.
