Papaya Salsa

Ingredients for 4 tazas

¼ cup lemon juice
¼ cup olive oil
1/3 cup chopped fresh cilantro
½ cup sliced green onions
1 box (10 oz.) frozen whole kernel corn, thawed
1 can (16 oz.) black beans, rinsed and drained
1 medium papaya, peeled and diced
1 medium red bell pepper, chopped
2 Chipotle MiniCubes


Combine all ingredients in a large bowl. Serve with chips or with grilled meat, fish or poultry.
