Heart-Shaped Pizza

Ingredients for 4 servings

3 gm fresh yeast (cake or compressed)
10 gm basil leaves for taste and garnishing
10 gm black olives
10 gm capers
20 gm salt
50 gm cut Mozzarella cheese
50 gm green bell pepper (cut into discs)
50 gm mushroom
100 gm crusted Italian tomatoes
100 gm pepperoni. In case of a chicken pizza, use shredded chicken breasts (pre-blanched)
350 ml water
650 gm flour
a large paper heart shape (12 inch diameter)
Italian pizza sauce as per your taste
oregano seasoning to taste
sausages and salami strips

Directions

In a large bowl, combine the water and sea salt.

Crumble the yeast into the salt-water mixture.

Add the flour gradually, and mix until the dough no longer sticks to the bowl. This takes 5 to 7 minutes.

Continue to add the flour while you mix. If the dough feels lumpy – stop adding the flour, but continue mixing until it stops feeling lumpy. When the lumps disappear, continue to add the flour and mixing.

After all the flour has been folded in well, and sides of the mixing bowl sides are clean, stop mixing.

Take the large dough ball out of the bowl and place on a lightly floured surface and cover for 5 minutes with a damp cloth.

The dough ball then requires vigorous kneading for 30 minutes, unless you have a machine to assist.

Knead until the dough turns lighter and is smoother in texture. Cover again for another 15 minutes.

Divide the dough into four. Pinch and shape these portions into round balls and then spread them into thin flat sheets. Place the paper heart on the dough sheets and cut it out in shape so that you get a proper hear-shaped pizza. Place into a lightly floured dough box and proof at room temperature for around 6 hours.

Now for making the pizza:

Spread 85 gm of crushed Italian tomatoes on each pizza base.

Sprinkle 50 gm of cut fresh mozzarella cheese evenly over the tomatoes.

Tear some basil leaves and sprinkle on top of the pizza.

Add sausage an salami slices or the shredded chicken.

Add black olives, capers and oregano to taste.

Preheat the oven to at least 260° C. Let the oven heat for at least half an hour before cooking the pizza.

If you have a baking stone then place it in the oven. Cook the pizza for around 3 to 5 minutes, rotating it as necessary so that it is cooked throughout.

Grate some cheese on top of the hot pizza so that it melts, and serve.
