Ingredients for 48 servings

1/4 cup orange juice
1/4 teaspoon ground cloves
1/2 cup Swanson Organic Organic Walnuts, Halves & Pieces
3/4 cup Swanson Organic 100% Certified Organic Extra Virgin Coconut Oil
1 cup Bob's Red Mill Whole Wheat Pastry Flour Organic
1 cup Eden Foods Dried Cranberries, Organic
1 cup NOW Foods Turbinado Sugar Certified Organic
1 egg
1 tablespoon grated orange zest
2 1/2 cups Bob's Red Mill Gluten Free Rolled Oats


Cream together softened (melted) coconut oil and turbinado sugar.

Mix in egg, orange juice and orange zest.

Once well incorporated, slowly mix in oats, ground cloves and flour.

Gently fold in cranberries and walnuts.

Make small balls of cookie dough, flatten them, and then place on greased cookie sheet.

Bake cookies at 350° F for 12 to 15 minutes.
